Mesquite Coaches Start Smoked Meat Business

West Mesquite Head Boys Basketball Coach, P J Randall, has deep roots in Mesquite. He played high school ball at Mesquite High and after finishing up his college ball at Midwestern State, he started his coaching career and has the Wranglers back in the playoffs. Over at Mesquite High, his younger cousin, Kelsi Baker, heads up the Skeeters girls program and has them in the post season for the first time in a decade. Baker was a standout for Mesquite Horn before going on to Texas Tech. When the cousins aren’t on the sidelines coaching their respective teams, you can catch them working on their other passion. During Covid they turned their passion for smoking meats into a full fledged family business. With nothing but time on their hands, the cousins started a “Takeout Tuesday” campaign and just watched as their business took off. Coach Baker and Coach Randall cherish these evenings together cooking. Not only to be able to provide quality food for their community, but to be able to talk hoops as well.
